Samos

Made from select Muscat grapes that are laid in the sun to dry and concentate their flavor. Upon completion of that phase, the grapes are vinified and then the wine is aged in oak for three years. The result is a full-bodied dessert wine with a complex bouquet.

Glass $5.00

Samos Grand Cru

The Muscat grapes are left to over-ripen on the vine. Once the grapes have attained the right sugar level, they are harvested and traditionally vinified. The result is a sweet wine with a 15% alcohol level.

It is well balanced with many ripe and tropical fruit flavors

present on the nose and on the palate.

A natural, sweet wine made from the Eliatiko grape variety in the Toplou Monastery in Sitia. After harvest, the grapes are laid out on straw mats to dry in the sun. The grapes are then pressed and vinified in the solera method. A deep ruby color with rich earthy aromas and flavors.

Glass $5.75

St. John Commandaria

The historical sweet desert wine. Harvested grapes are spread out in the sun to dry until their sugar density reaches 19-23 Baume. Similar to the solera system, the barrels are never completely emptied. New juice is added to the barrel containing old juice and the process begins again. A sweet wine with a powerful bouquet filled with dried fruits, spices, and oak. It is luscious and full-bodied.

RED WINES

Naoussa Imiglykos

Vintage 2000 Bottle $22.00

Harvest in Naoussa begins at the end of September. Crushed grapes are transferred to stainless steel tanks. Saint George

Vintage 2000 Bottle $23.00

St. George is considered the foremost variety for creating fine red wine. It is our aromatic grape that creates wine of great texture and body. The wine is classically unified and aged for ten months in French oak. It is then aged an additional 12 months in the bottle. Well-balanced, wonderful texture, abundant fruit and a long, rich finish.

Cava Tsantalis

Vanilla, sage, and cinnamon lie on a background of blackberries and plum. Gentle, soft, but fleshy, with the favorite velvety presence of Merlot and with hints of wood at the finish. Enjoy it now and up to 2008.

Asprolithi Collection Cabernet Sauvignon

Vintage 1999 Bottle $28.00

The microclimate and vineyard elevation help to fine-tune extraction. The grapes undergo 15-18 days fermentation under temperature piloting. Fermentation begins at 14°C and is gradually increased during the course of fermentation to 28°C. Aroma extraction maximized during the initial cold stage; tannin, during the warm stage. Free-run juice is separated from vin de presse, followed by malolactic fermentation. Decisions are then made regarding a final blend. The wine undergoes coarse filtration, then moves to a combination of French and American Mission oak for 12 months. Any fining and filtering aims only to remove yeast. This Cabernet is full of young, dark fruit. It has a sophisticated structure, medium alcohol and herbal notes. It is smooth to the finish but not without fine texture and typical fresh mouth feel.

Chateau Julia Merlot

Vintage 2000 Bottle $33.00

From the famous Merlot variety, yielding the best results within the biological cultivation, comes this overflowing wine with the composite taste of small berries in the mouth. Its purple evening dress and the wild cherry and mulberry aromas are always at center stage and are applauded by the senses.

Vintage 1999 Bottle $37.00

Red dry. The red Merlot and Xinomavro varieties (of equal proportion) are aged a minimum of one year in oak barrels and another six months in the bottle.
